Ingredients:

Chicken, boiled and shredded 3 breast pieces
Butter 3 tbsp
Tomatoes, finely chopped 4 medium
Green chillies, finely chopped 8
Spring onion, finely chopped 4
Black pepper powder 1/2 tsp
White or bran sandwich bread 30 slices
Lettuce leaves, finely chopped for garnish
Butter for spreading
Salt to taste

Method:

* In a saucepan, heat butter and fry green chillies on low heat, then add finely chopped tomatoes, salt and black pepper. Stir together and cook on medium heat for a few minutes. Then lower heat, cover and cook till tomatoes are tender. Add chicken and spring onions, mix, stirring well on high heat for a few more minutes.
* Cut the edges of bread and butter every slice. Spread chicken filling on a slice of bread and cover with buttered bread. Make all sandwiches in this way.
* Serve garnished with lettuce leaves.
