Ingredients:

Chicken, boneless cut into cubes 1 kg
Tomatoes, finely chopped 4 medium
Onions, cut into rings 2 large
Green chillies, finely chopped 6
Ginger / garlic paste 2 tsp
Chili powder 1/2 tsp
Coriander powder 1/2 tsp
Black pepper powder 1/2 tsp
Garam masala powder pinch
Desi ghee or oil 7 tbsp
Coriander and mint leaves, 2 tbsp, finely chopped
Salt to taste

Method:

* Heat ghee / oil in a saucepan, add chicken and cook on high heat till chicken is cooked and no liquid remains. Add ginger / garlic paste, fry for a minute. Then add tomatoes, coriander powder, red chili powder and salt. Mix well on medium heat.
* Keep stirring till tomatoes are cooked and oil separates from the chicken. Add green chillies, onion rings, black pepper and mint and coriander leaves. Fry on high heat for 2 minutes.
* Cover and leave on very low heat for few minutes.
* Garnish with mint and coriander leaves.
* Serve hot with parathas.
