Ingredients:

Chicken fillet ½ kg
Soya sauce ¼ cup
Honey 2 tbsp
Curry powder 2 tbsp
Grated ginger 1 tbsp
Salt 1 tsp
Lemon juice 2 tbsp
Roasted cumin seeds 1 tsp

Ingredients for peanut sauce:

Peanut butter ½ cup
Coconut milk 1 cup
Chili sauce 2 tbsp
Lemon juice 2 tbsp
Turmeric powder ¼ tsp
Ginger/ garlic 1 tsp

For garnishing:

Chopped peanuts (roasted)
Cucumber slices

Method:

* Soak 20 wooden skewers in cold water for about 30 minutes. Cut the chicken into thick flat strips of about 6 cm (2 inches) long and 2 cm (1 inch) wide. Thread a strip of chicken into each skewer. Next, mix all the ingredients of marinade and pour over chicken.
* Cover and refrigerate for 30 min. Put all the ingredients of peanut sauce in a heavy-base pan with ½ cup water. Stir over low heat until the mixture boils. Remove from heat. Heat a BBQ grill or char grill. Brush sticks with oil. Cook each side for 2-3 min or fry in 2 tbsp. Oil. Top with peanut sauce and garnish with chopped peanuts and cucumber slices.
